Avocado toast has been popping up on breakfast and brunch menus a lot this year and the trend isn't showing any signs of slowing. For good reason, it's delicious and packs a nutrient punch we all need in the morning. We thought this easy breakfast idea might pair well with an Herb Parmesan Biscuit. We were thinking mild avocado would offset the biscuit's delicate flavor and pungent aroma.
The biscuits we used were leftover from dinner the night before and wrapped in plastic wrap overnight. After 5 minutes in the toaster oven they were perfectly delicious, all over again. If you don't have a toaster oven you could also toast them in a slot toaster, they won't crumble and break on you. Popping them in a preheated oven at 400 degrees for 5 minutes will also nicely refresh your biscuits. And if you aren't an avocado fan, just spread them with butter and jam!
Avocado Toast on Herb Parmesan Biscuits
- 1 ripe avocado (will cover 2 split biscuits)
- 1/4 large lemon
- salt and pepper to taste
- chili oil
- chili flakes
- small tomato for garnish
- Herb Parmesan Biscuits, previously baked
Pit and peel the avocado and place in a bowl. Add the lemon juice, salt and pepper and mash with a fork, leaving some chunky pieces in the mixture. Toast your split biscuits in the toaster oven, slot toaster or oven till warm and golden brown on top. Spread evenly with the avocado mixture. Garnish with chili oil and flakes to taste and slices of tomato. Enjoy!

If you are craving something a little sweeter for breakfast or dessert an easy modification is to simply add an effortless icing to the Blueberry Biscuits. We tried a lemon icing and the combination was delicious and summery!
Simple Lemon Icing
(makes enough icing for 6 Blueberry Biscuits)
1 1/2 cups confectioners sugar
1/4 cup of milk (add more for thinner consistency, less for thicker consistency)
1 tsp of vanilla
Juice from 1 lemon
Whisk together all ingredients in a bowl until lumps have vanished. You can do this by hand or use a stand mixer. Feel free to add more of any ingredient to change flavor to taste. (We liked our icing very lemon-ey). Drizzle over warm Blueberry Biscuits and serve.
