I'm proud to be a Clemson Tiger. And we Tigers like things orange. Our sunsets, our uniforms, our flags, our home decor, our faces. The best example of our love of orange is on game day, we Tigers are SERIOUS tailgaiters and our pride shows. When our sea of orange is stacked against other schools out there we are usually ranked at the top. Clemson University was the winner of the "South's Best Tailgate", a contest put on earlier this fall by Southern Living. The best part of all of this orange and our relentless school spirit is that once you don your first orange t-shirt and paint a tiger paw on your face, you're inducted into the Clemson family with a lifetime membership. Doesn't matter who you are or where you're from, you're a Clemson Tiger now and the rest of us are happy to have you.
One game day morning this fall my friend Anna and I invented these biscuits. (By just saying biscuits and stating the time as "morning" I am implying they are breakfast sandwiches. This is a Southern thing.) Anna is the truest Clemson fan I know. She's been a member of IPTAY since who can even remember and she screams till she loses her voice in Death Valley at every game. Orange biscuits? Right up her alley. We baked the perfectly orange Robinhood Meetinghouse Sweet Potato Biscuits and while they were cooling, we scrambled eggs, fried bacon and sliced jalapeno jack cheese. Like true Tigers, we decided to spice things up a bit. We mixed Siracha hot sauce with maple syrup and spread this liberally on each split biscuit, then piled them high with our fixins. We wrapped them up in foil, put them in an orange basket and made our way to our tailgate. They disappeared faster than you can cheer "1-2-3-4-1-2-3-4-C-L-E-M-S-O-N-T-I-G-E-R-S-fight Tigers fight Tigers FIGHT FIGHT FIGHT!" The combination of sweet, spicy, buttery, salty, cheesy perfection was exactly what we needed for game day.
Clemson Tigers can be as sweet as syrup and as wholesome as a biscuit. But you better not get too comfortable, so watch yourself. They're spicy and can bite you back, they'll leave you reaching for a cold drink with your mouth on fire. (Anna!) This sandwich just about sums up everything that we are in one perfect tailgate food. My ultimate Biscuit Girl dream is that one day Anna and I can make them for our head coach Dabo Swinney. He's earned one.
