Pumpkin Cinnamon Roll Coffee Cake

It's really simple to make a coffee cake from a box of Cinnamon Rolls. I needed a quick and easy treat to spoil some dear friends that needed spoiling - yet only had about an hour to spare in a jam-packed Saturday morning. I thought delivering a warm Pumpkin Cinnamon Roll coffee cake and with some Pumpkin Spice Lattes from Starbucks would be the perfect way to start a fall weekend without requiring a full day in the kitchen with a sink full of dreaded dishes. Allow Pumpkin Cinnamon Rolls to thaw by letting them sit out for 10 minutes, unwrapped. Arrange them in a well-greased cake pan or a loaf pan, preferably non-stick. The contents of one box happens to fit perfectly in a loaf pan. I cut 2 rolls in half to fill the empty spots. It's ok if some stick up or aren't perfectly filling the space, the layers in the rolls will spread out while baking.

Bake for about 30 minutes or until the center of the cake is no longer doughy. The easiest way to tell if it's "done" is to gently pull back a layer to see whether it's sticky or is fully baked.

Flip the cake over on a plate and ice while it's still warm, the heat will evenly distribute the icing.
