Blueberry Biscuits with Lemon Icing

Our Robinhood Meetinghouse Blueberry Biscuits are rich and buttery with only a slight hint of sugar and vanilla to complement the tangy wild Maine blueberries.  Biscuits that are too sweet just become scones and no one wants that.  We want REAL biscuits!  

If you are craving something a little sweeter for breakfast or dessert an easy modification is to simply add an effortless icing to the Blueberry Biscuits.  We tried a lemon icing and the combination was delicious and summery!  

Simple Lemon Icing

(makes enough icing for 6 Blueberry Biscuits)

  • 1   1/2 cups confectioners sugar

  • 1/4 cup of milk (add more for thinner consistency, less for thicker consistency)

  • 1 tsp of vanilla

  • Juice from 1 lemon

Whisk together all ingredients in a bowl until lumps have vanished.  You can do this by hand or use a stand mixer.   Feel free to add more of any ingredient to change flavor to taste.  (We liked our icing very lemon-ey).  Drizzle over warm Blueberry Biscuits and serve.

After so many biscuit dough experiments I couldn't believe I hadn't thought of this myself! The only ingredient you need to make Biscuit Waffles is a box of Robinhood Meetinghouse biscuits, any flavor you wish.
